Coratina oil from the Murgia
We grow our olive trees on the Murgia, in Puglia, among dry-stone walls and red earth. Our olive is Coratina, the variety that makes the boldest oils.
Every year we sell only the oil from our own harvest: when it’s gone, it’s gone.

The Murgia
Our olive trees grow on the Murgia, the stony plateau of central Puglia, among dry-stone walls and red earth. Cold winters and dry, windy summers: hard conditions that give small olives, full of goodness.
Coratina
It is the variety of this land, named after the town of Corato. Among Italian cultivars it gives one of the oils richest in polyphenols: that is why it is bitter and peppery, and why it keeps for a long time.
We harvest early, when the olives are starting to change colour: they give less oil, but it is more fragrant and intense.
From the grove to the mill
We pick the olives and take them straight to the mill, the same day: the less time between tree and milling, the fresher, more aromatic and richer in polyphenols the oil stays.
Why pre-order
We make a limited amount, which depends on the year. Pre-orders tell us in advance how much oil to bottle and in which sizes, and you can be sure of getting yours.
How we farm
Care for the land and the trees
We look after our groves with low-impact practices, meant to protect the soil, the trees and everyone who lives in the countryside.
No weedkillers
We use no chemical herbicides: between the trees we let the wild grass grow, which protects the soil and keeps it alive.
No synthetic fertilisers
We feed the soil naturally, with plant and animal matter, never with synthetic chemical fertilisers.
Natural protection
To protect the trees we use only products of natural origin, when they are needed and only as much as needed.
